This high fiber waffle recipe is a wonderful way to start the morning! They are loaded with healthy insoluble and soluble fiber, they are filling, and delicious.

So many breakfast foods are yummy, but often made with all purpose flour and added sugar. I never add sugar to my baked goods anymore. I just add a ripe banana and maybe some other fruit.

We are now finding out that eating all-purpose flour and sugar are the worst ways to start your day. Switch from all-purpose flour to whole wheat or another alternative flour.

This high fiber waffle recipe can be made with all whole wheat flour or with a portion of flax seed, tiger nut flour, and whole wheat. You can even try garbanzo bean flour too! I have and it’s great too.

You can add hemp seeds too! I didn’t for this batch but often do add hemp seeds to my pancakes or waffles.

If you have buttermilk in the fridge that’s great, if not, stock up on powdered buttermilk and have it at your fingertips whenever you need it. Here is Bob’s Red Mill powdered buttermilk.

Ingredients
  • 1 cup whole wheat flour
  • 1 cup Buttermilk I used a powder mix and added water
  • 3 Eggs
  • 1 Banana
  • 1/4 to 1/2 cup frozen or fresh blueberries
  • 1/4 cup Ground flaxseed
  • 1/4 cup Tiger Nut Flour You can use all flaxseed or more whole wheat flour
  • 4 TBSP olive oil
  • 1 TSP Baking power
Instructions
  1. I used an immersion blender to mix my buttermilk powder and water. If you have fresh buttermilk you can skip this step.
  2. I added the blueberries and banana to the buttermilk and blended.
  3. Next, I added the eggs and mixed for a few seconds.
  4. In a separate bowl, I added the whole wheat flour, flaxseed, baking powder, tiger nut flour and mixed together.
  5. Add the wet ingredients and dry ingredients together and mix until well combined.
  6. Heat up your waffle maker and let the batter sit for about 5 minutes to thicken up before pouring into your waffle maker.
  7. Pour about 3/4 of a cup into your waffle maker. This recipe makes 3 waffles.
Recipe Notes

This recipe makes three waffles. You can double it to make more waffles. Make it even more nutritious by adding hemp seeds, Brewers yeast or another healthy add in.
