Apple Pie with a Paleo Pecan Crust

A healthified, Fall dessert.

Ingredients

Apple Pie Filling

  • 4-5 medium apples peeled, cored, and cut in 1/8 inch slices
  • 1 tbsp fresh lemon juice
  • 2 tbsp cinnamon
  • 1 tsp nutmeg

Pecan Crust

  • 1/2 cup pecans
  • 2 Eggs
  • 1 tbsp coconut flour
  • 1.5 tsp salt

Instructions

For the pie crust

  1. Pulse pecans in a food processor until everything is nicely combined and has the texture of gravel.
  2. Beat the eggs in a bowl until well combined.
  3. Pulse the eggs, coconut flour, and salt until thoroughly combined and forms a ball.
  4. Grease a 9-inch pan.
  5. Press crust evenly onto bottom and the sides of the pan using your hands. Set aside and begin adding filling.

For the pie filling

  1. Peel, core, and cut in 1/8 inch slices (mine are never exact)
  2. In a large bowl, evenly coat all your apple slices in cinnamon, lemon juice, and arrowroot.
  3. Fan out your apples in a circle onto the uncooked crust starting from the outside in.
  4. Continue the same process until you run out of apples.
  5. Cover tart with foil and bake at 350 degrees F for 45-70 minutes, or until juices are bubbling.
  6. Remove the foil and bake an additional 5-10 minutes, so it gets that nice brown color and the crust is a bit toasted.
  7. You can serve this with homemade whip cream, fresh yogurt, or on its own. Enjoy!
