Avocado Pasta Sauce
A healthier, vegan alternative to pesto. Creamy and delicious!

Ingredients

uncooked pasta, whole wheat if possible

garlic cloves

cup
fresh basil leaves
plus more for serving

juice of a lemon

tbsp
olive oil

ripe medium avocado, pitted
1/2

salt
black pepper, to taste
lemon zest, for serving
basil, for serving
Instructions
Bring a large pot of salted water to a boil and cook the pasta according to the package.
In a food processor, pulse the garlic and basil.
Add the lemon juice, avocado flesh, and 1 tbsp water and process until smooth.
Drain the pasta and place it back in the pot. Stir in the avocado sauce until full incorporated.
Top with your lemon zest, pepper, and extra basil leaves. Enjoy immediately, as avocados tend to turn brown when exposed to air.
