Avocado Pasta Sauce

A healthier, vegan alternative to pesto. Creamy and delicious!

Ingredients

  • 9 oz uncooked pasta, whole wheat if possible
  • 2 garlic cloves
  • 1/4 cup fresh basil leaves plus more for serving
  • 2 tbsp juice of a lemon
  • 1 tbsp olive oil
  • 1 ripe medium avocado, pitted
  • 1/2 tbsp salt
  • black pepper, to taste
  • lemon zest, for serving
  • basil, for serving

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package.
  2. In a food processor, pulse the garlic and basil.
  3. Add the lemon juice, avocado flesh, and 1 tbsp water and process until smooth.
  4. Drain the pasta and place it back in the pot. Stir in the avocado sauce until full incorporated.
  5. Top with your lemon zest, pepper, and extra basil leaves. Enjoy immediately, as avocados tend to turn brown when exposed to air.
