Banana Oatmeal Balls (No Bake)

These banana oatmeal energy balls are so good and so easy! Fiber filled and no bake, these energy balls are the perfect snack for every day or on the go.

Ingredients

  • 1 medium ripe banana
  • 4 Medjool dates they are a little more tough than regular dates, soak these for about 5 minutes
  • 1/2 cup water for the dates. save in case mixture is too dry.
  • 1/2 cup old fashioned oats
  • 1/4 cup coconut flour
  • 1 tsp cinnamon optional
  • 1 tsp honey, adjusting sweetness as necessary optional

Instructions

  1. Add the dates and banana into a food processor or high-speed blender and process until the mixture is smooth.
  2. Next, add in the oats and coconut flour and blend until the ingredients are well combined. If the mixture is sticking together too much to blend properly, you can use the water from the dates a tbsp at a time.
  3. Transfer the mixture to a bowl and then scoop out about 1 1/2 tbsp onto a cookie sheet.
  4. Let balls chill in the fridge for 15-20 minutes until firm. Enjoy!
