Zucchini bread is so easy to make and it comes out delicious each time! The zucchini actually makes the bread even more moist and delicious. As with most of my recipes, I aim to create recipes full of fiber and healthy goodness, while reducing how much added-sugar is in a recipe.

  • 2 whole zucchini, shredded Or 1 large zucchini
  • 1.5 cups Oat flour Pulverized rolled oats into flour
  • .5 cup Flaxseed (ground)
  • 3 Eggs
  • 1 cup coconut oil
  • 1 cup crushed walnuts crushed in food processor
  • 1/2 cup dates and figs, blended
  • 1.5 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp baking soda
  • 1 tbsp vanilla extract
  • 1.5 tsp salt
