Banana Matcha Cookies

These delicious Matcha cookies make the perfect afternoon snack or lunchbox treat and contain plenty of vitamins, minerals, and antioxidants. They’re a fun to get your kids eating healthy and something the whole family can enjoy.

Ingredients

  • 2 tsp Matcha Powder
  • 1 1/2 cup spelt flour
  • 2 tbsp coconut oil
  • 1 ripe banana
  • 4 tbsp coconut sugar
  • 1 tsp baking powder
  • 1/4 tsp pink Himalayan salt

Instructions

  1. Preheat the oven to 355 F or 180ºC, and line a baking sheet with parchment paper.

  2. In a large bowl, combine the spelt flour, Matcha powder, coconut sugar, baking powder and salt. 

  3. In a smaller bowl, mash the banana with a fork, and then add it to the dry ingredients. 

  4. Pour in the coconut oil, and mix until the dough starts to come together. It should feel springy and easy to manage, you might need to add a touch more flour if the dough is too sticky. 

  5. Divide it into 10 pieces, and then roll into small balls. Place them on the baking sheet allowing some space for the cookies to expand, and then press down with the back of a fork.

  6. If you prefer a more uniform finish, roll out the dough and then use a cookie cutter instead. 

  7. Bake them in the oven for 10 to 15 minutes, and then place on a rack to cool. If you want to store them for later, just keep them in an airtight container.
