This Israeli couscous salad has the mild flavor of scallions and the nuttiness if the pine nuts. Try this super simple side dish any night of the week.

Israeli Couscous with Scallions and Pine Nuts

Servings 6 people

Ingredients

  • 2 1/4 cups Israeli Couscous
  • 1/4 pine nuts whole
  • 1 whole stalk scallions diced
  • 1 tbsp olive oil
  • salt and pepper, to taste
  • 1/4 cup dried apricots, diced

Instructions

  1. Cook the Israeli couscous according to the package.

  2. Slice off the ends of the scallions, keeping the white intact. Dice the scallions all the way down and set aside.

  3. Add the tablespoon of oil to a pan over medium heat. Add the pine nuts and scallions in and saute for about 5 minutes, until the scallions look wilted. If you see the pine nuts browning too fast, you can lower the heat.

  4. When the couscous is done cooking, drain it and add to a serving bowl or dish. Pour the pine nut and scallion mixture over the top and give it a good mix so everything is combined.

  5. Once your dish is plated, top with the dried apricots. 

  6. Season with salt and pepper to taste and serve immediately. This dish is even great served cold!
