These apple pie pancakes are perfect for fall! These gluten-free pancakes have nutritious almond flour, flaxseed, and fresh apples.

Apple Pie Pancakes

Delicious, classic apple pie taste with all the flavors of Fall. This is a healthy fiber filled breakfast!

Ingredients

Dry ingredients

  • 1 cup almond flour
  • 1/2 cup flax seeds
  • 1/2 cup tiger nuts can be replaced with more almond flour or another flour
  • 5 in dates pureed soakedwater for 5 minutes
  • 4 in figs pureed soakedwater for 5 minutes
  • 2 tsp baking powder
  • 3 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ground clove
  • 1/2 tsp salt

Wet ingredients

  • 1 1/2 cup whole milk add 1/2more if batter is too thick
  • 2 Eggs
  • 2 tbsp melted butter slightly cooled
  • 1 tsp vanilla extract
  • 2 medium sized apples grated

Instructions

  1. Soak your prunes and figs, if needed to make it easier to puree.
  2. Whisk together the dry ingredients in a large bowl.
  3. In a separate bowl, mix together your wet ingredients and beat until fully combined.
  4. Add in the mixed wet ingredients into the dry ingredients and mix it up until it's one fully combined mixture and it starts to look like a thick batter.
  5. Grate the apples and then use a mixing spoon or a small spatula, fold in the grated apples. Squeeze out some of the juice.
  6. Heat your griddle and spray with oil. You can grease your pan with regular oil or butter if you want.
  7. Measure out 1/4 cup scoops and cook 1-2 minutes on each side. Flip only once. Cook time might have to be modified depending on your griddle or pan.
  8. Continue this process until you finish your batter. Serve immediately. You can also top with extra apple slices or your favorite fruit, if desired.
