Healthy Broccoli Bites

These broccoli bites are an easy and healthy finger food. Make them ahead of time for a grab-and-go snack.

Ingredients

  • 1 head broccoli, cut into equal size florets
  • 1 cup cheddar cheese, shredded
  • 1/3 cup white onion, finely diced
  • 1/2 cup breadcrumbs
  • 1/2 tsp garlic Powder
  • 1 tbsp flax seeds
  • 2 tbsp fresh parsley, minced

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large saucepan, bring half a cup of water to a boil. Pace the broccoli in the water and reduce heat to medium. Cook for 6-7 minutes, or under it's tender enough for a fork to go through. Set aside to cool slightly.
  3. Drain as much water as you can from the broccoli and then chop it up.
  4. In a large bowl, combine all your ingredients and season with salt and pepper.
  5. Once mixed and well combined, fill your muffin trays to the top
  6. Baked for 15-20 minutes. Let cool for 10 minutes before sliding a knife around the edges of each muffin tray to slide them out. Enjoy!
