Baked Pears

These baked pears are super easy to make and add a level of sophistication to any dinner party menu

Ingredients

  • 4 pears, peeled and pitted
  • 2 tbsp coconut oil
  • 1/2 cup dried apricots, chopped
  • 1/2 cup grape juice or white wine
  • 1/2 tsp cinnamon
  • 1/4 cup sugar

Instructions

  1. Preheat oven to 400 degrees.
  2. Cut the pears in half and core the pits. Best pairs to use are Bosc.
  3. In a large cast iron skillet (or a skillet that can be transferred to an oven) heat the coconut oil.
  4. Place the pear halves pit side down in the heated pan and cook for 5-7 minutes, until they have slightly browned.
  5. Place skillet in the oven and bake for 15 minutes, flipping in between.
  6. Remove from the oven after 30 minutes. Take the pears out of the pan.
  7. Once removed, pour your juice or wine in the skillet slowly. Place your dried apricots into the skillet and cook in the wine. About 2 minutes. Add the cinnamon and mix well. Then add the sugar. Stir to combine and cook until liquid reduces into a nice sticky concoction.
  8. Cut your pears in quarters or leave them in halves. Top with apricot mixture. Serve warm and enjoy!
