1.5CupsBasmati RiceYou can use Jasmine too
1.5CupsWater
14OuncesCoconut milk
1/2CupUnsweetened Shredded Coconut
1/8CupCoconut Sugar
1.5Teaspoonssalt
1TeaspoonBlack Pepper
Instructions
In a dry skillet, toast the shredded coconut over medium-low heat for 4-5 minutes or until nicely browned and fragrant.
Combine the basmati rice, coconut milk, water, coconut sugar, salt and pepper in a medium saucepan and heat on high until boiling.
Reduce heat to low, cover, and simmer for 20 minutes.
Remove from heat, fluff with a fork, and let stand for 5 minutes.
Top with toasted coconut and live up the island dream!
