Ingredients

  • 1.5 Cups Basmati Rice You can use Jasmine too
  • 1.5 Cups Water
  • 14 Ounces Coconut milk
  • 1/2 Cup Unsweetened Shredded Coconut
  • 1/8 Cup Coconut Sugar
  • 1.5 Teaspoons salt
  • 1 Teaspoon Black Pepper

Instructions

  1. In a dry skillet, toast the shredded coconut over medium-low heat for 4-5 minutes or until nicely browned and fragrant.
  2. Combine the basmati rice, coconut milk, water, coconut sugar, salt and pepper in a medium saucepan and heat on high until boiling.
  3. Reduce heat to low, cover, and simmer for 20 minutes.
  4. Remove from heat, fluff with a fork, and let stand for 5 minutes.
  5. Top with toasted coconut and live up the island dream!
