Chanukah is celebrated on the 25th day of the Hebrew month of Kislev (late November or December, depending on the lunar year.) Since the name itself means “to dedicate,” Chanukah commemorates the rededication of the Temple that was once stolen and desecrated by the Greeks in 168 B.C.E.
When the Jews regained control of their place of worship, only enough oil remained to light the menorah for one night. Miraculously, the flame stayed lit for eight whole nights, which signifies the celebration of the Eight Nights of Chanukah.
Eight nights of celebration calls for eight nights of Chanukah recipes!
