This Russian potato salad has all the flavors of classic potato salad but with a twist. Olivie also has apples, sweet peas, and sliced turkey. It’s savory, a little sweet, and absolutely delicious.

If you’re looking to switch up your normal potato salad, this one is perfect. It’s different but so satisfying.
This potato salad would go well with any grilled items or even some burgers. Try it out! It might become your go-to potato salad recipe.
This is my version of the quintessential potato salad with classic Russian flavors.
- 2 large potatoes, peeled and sliced lengthwise
- 3 carrots, peeled and sliced lenghtwise
- 1 15 oz can of sweet peas, drained and rinsed
- 8 dill pickles, chopped
- 1 medium onion, diced I like to use red onion
- 2 apples, diced
- 3 turkey slices
- 4 hard-boiled eggs, chopped
- 2 tbsp mayonnaise
- 1/2 tsp salt
- ground black pepper, to taste
In a medium skillet, cook your diced onion until translucent, about 5 minutes.
In a large bowl, combine the potatoes, carrots, peas, pickles, cooked onion, turkey, and eggs.
Stir in the mayo, salt, and black pepper gently until well combined.
Transfer to a large serving bowl and cover with plastic wrap. Chill for 30 minutes and serve cold. Enjoy!
