My Family Loves this Russian Potato Salad

I love making this Russian potato salad for my family. My twins love the colors from all the different ingredients, especially the peas. Everyone else loves all the flavors the ingredients give when combined. You wouldn’t think so add in all these yummy ingredients in regular potato salad!

If you’re looking to switch up your normal potato salad, this one is perfect. It’s different but so satisfying.

This is my version of the quintessential potato salad with classic Russian flavors.

Ingredients
  • 2 large potatoes, peeled and sliced lengthwise
  • 3 carrots, peeled and sliced lenghtwise
  • 1 15 oz can of sweet peas, drained and rinsed
  • 8 dill pickles, chopped
  • 1 medium onion, diced I like to use red onion
  • 2 apples, diced
  • 3 turkey slices
  • 4 hard-boiled eggs, chopped
  • 2 tbsp mayonnaise
  • 1/2 tsp salt
  • ground black pepper, to taste
Instructions
  1. In a medium skillet, cook your diced onion until translucent, about 5 minutes.

  2. In a large bowl, combine the potatoes, carrots, peas, pickles, cooked onion, turkey, and eggs.
  3. Stir in the mayo, salt, and black pepper gently until well combined.
  4. Transfer to a large serving bowl and cover with plastic wrap. Chill for 30 minutes and serve cold. Enjoy!
