- 1/2 cup steel cut oats
- 1/2 cups pre-soaked quinoa
- 1 1/2 - 2 cups chopped mixed nuts (pecans walnuts, almonds, hazelnuts)
- 1/2 cup coconut oil melted to a liquid
- 1/2 cup prunes or dates pitted
- 1/2 tsp cinnamon
- 1/2 tsp flaky sea salt
-
Preheat oven to 275º F.
-
In a bowl, mix together the oats, quinoa, and chopped nuts. Set aside.
-
In a blender or food processor, combine coconut oil and dried fruit. Blend to a paste. Combine with dry mixture and stir until evenly coated. Sprinkle with cinnamon and sea salt and mix again.
-
Line a large (or two medium) baking sheet with parchment paper, aluminum foil, or a silicone baking sheet, and spread granola mixture evenly.
-
Bake for 40 minutes, stirring halfway through. If you are adding optional ingredients, add them now, and stir. Bake for a final 15-20 minutes.
-
Remove from the oven, and allow to cool.
-
Store in an airtight container for 3-4 weeks.
-
Serve over yogurt, fruit, oatmeal, ice cream, or just snack on it alone. This is not a very sweet granola, so add raw honey or maple syrup to taste, if you like more sweetness.
